A long, slow, very cool vintage lead to great flavour development at low baumes whilst retaining great acidity. Fruit was selectively machine harvested in the cool of night, then destemmed and fermented on skins between 8-13 days. Once fermentation was complete the wine was gently pressed, following Malolactic fermentation the wine was filled to predominately French oak where it was matured for just over 18 months.
